Teacher Week: Make Ahead Meals


Today is TUESDAY! As noted in my last post, my hubster does most of the cooking. But, when I dabble into the cooking department, there are a few things that I LOVE that are easy if I am in need of a quick meal. There aren't going to be any "ground-breaking" recipes shared..... but there might be something that you find delish :)


First off, my husband and I make a list on Sunday of the meals we want to make throughout the week. We use to just go to the store and randomly pick up a bunch of items and go with the flow. Up until a few years ago....... Now we PLAN! :) It saves us a ton of money, and a lot of headache at the grocery store. No more aimless wandering around the store each week. 

We use to use the grocery app called "Quicky". It was a list we could check off and the list would sync to both of our phones. I could add something to the list throughout the week and it would update automatically. 


Now with a baby at home, I can't be bothered. LOL! I use a good ol' fashioned list. Laid out with headings in relation to our grocery stores layout.

Ok.... now for the go-to recipes!

These can be made for lunch or dinner, but are all quick ones that I like and that are pretty healthy.

WRAPS & SANDWICHES!
I always try to have tortillas, avocados, and either pre-cooked turkey or chicken. Making wraps for lunch or dinner is super fast and always delish!
This wrap is made using a tortilla, salmon, avocado, bacon and spinach. No need for dressing. The avocado takes its place :)

This sandwich is made with pesto, mozzarella, avocado & baby spinach, then grilled like a grilled cheese! Ummm..... Yummmmmmmmmmmm!

Easy peasy!

Bbq Chicken Pizza!
This is made with a whole wheat tortilla, chicken, red onion, bbq sauce of choice, cheddar or mozza cheese & cilantro. You can also use whole what flat bread or frozen pizza dough from the grocer.

One more....
Salmon with Avocado Salsa. This recipe is from The Cookie Rookie

INGREDIENTS
  • 2 lbs salmon, cut into 4 pieces
  • 1 tbs olive oil (I used light extra virgin olive oil)
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • ½ tsp ancho chili powder
  • 1 tsp black pepper
  • for the Avocado salsa:
  • 1 avocado, sliced
  • ½ small red onion, sliced
  • Juice from 2 limes
  • 1-2 tbs finely chopped cilantro (depending on how big of a cilantro lover you are)
  • Salt to taste

INSTRUCTIONS
  1. Mix the salt, chili powder, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix
  2. refrigerate for at least 30 minutes.
  3. Pre-heat the grill.
  4. Combine the avocado, onion, cilantro, lime juice, and salt in a bowl and mix well, chill until ready to use.
  5. Grill the salmon to desired doneness. (I grilled for about 5 minutes)
  6. Top with avocado salsa and enjoy!
